Do you mean YOU setting a pick for another player, or another player setting a pick for you?
If you want someone to set a pick for you, then just run the "pick-and-roll" play from the quickplay options (press quickplay button, default is C, and then choose the pick and roll")
If you use player lock and you want to set a pick for someone else, then you can try running into their defender.
