Is it possible to view replays of non-superstar players, for example, if you dunk with a high-flyer using the high-flyer superstar "button", but if my player doesn't have a superstar "button", could i view a replay by pressing the dunk button

No, you can't. Only thing you can do to watch action of your not-superstar player is entering instant replay from the pause menu.
