Why does Dwayne Wade always do the same reverse windmill when he has a breakaway?

YOu have to choose a certain dunk to do because he is a Highflyer, he can do one handed windmills, two handed wimndmills, reverse, air jordan, and other stuff...

can you choose dunks even if you are an ordinary player. i mean dont have superstar ability..
