how can i remove Ewing, Tim Hardaway and those players that dont play in the NBA anymore...

Using the Toolkit: Uncheck their ISCREATED box.
Using DB Commander or another DBF editor: Change their ISCREATED field to True.
Once you have done that, enter the game, load the roster where you made those changes, go to the Created Players List in Team Management. You can then delete those players.
