Will it be posible to play two players offline in the "Be a Pro" mode, one with the "Pro" and the other with any other player on the team?

You should ask the producers that question at the official NBA Live 09 EA forum. They have a thread where you can ask the producers questions. It's also possible that Andrew may be able to answer that in a few weeks, though.
