Open players.dbf file, find line of a player that you want to edit and search for the fields where the ratings values are... names are similar, for example FGPBASE is field goals rating and so on, more info you can find here.

If you're not in Dynasty/Season Mode though, you're better off editing as much as you can from within the game so that the overall rating is recalculated automatically, and only editing the databases when you need to modify a hidden attribute or perform some other modification that cannot be done in-game.

You have to enter your player you have changed in the edit player menu. Then the overall will recalculate.

You have to open appearance.dbf file with DB Commander. But first, open players.dbf file again, find player's you want to edit line and note his ID. Then, find the same ID in appearance.dbf and columns HEIGHT and WEIGHT are those you are looking for. Height is in inches, so make sure you calculate it good. Weight is in pounds.

Yes, in feet/inches, not in metres/centymetres.

But 5'11 is less than 190 cm (about 180 I think) if you meant that.

A handy point of reference is 6'6" = 78. Keeping that in mind, you can add or subtract from that value to determine a player's height in feet and inches and change it as desired.

It is in appearance.dbf as well. Skin tone 0, 1, 2, 3 and so on.

0 is pale white...the highter the number, the darker the skin.

I'd recommend using one of the Decade All-Star coaches, I believe at least one of those faces has grey hair.
