Sounds like you can either completely avoid using real teams and players or allow the creation/editing of players to match real life counterparts, which seemed to get EA in trouble in the past.

The interesting thing about that article is that it argues that the lawsuit doesn't prevent EA from releasing college sports games, but goes on to explain how their hands are in fact tied from a legal perspective. Sure, no one is specifically prohibited from making a college sports title, but the various restrictions and licensing issues make it less feasible. In other words, they're not specifically barred from making such games, but they're effectively barred, at least if they want to have any kind of authenticity (which as the article notes, is the whole appeal).
