I suspect a couple of factors are in play for this. They're two aspects of one reason really, and that reason is that each coach's faces hasn't been modelled. Skinned, yes. But not modeeled to any high degree.
1) There seems to be one coach model used for everybody. They players would look wierd too all of the faces were put on the same model. Some of the players look wierd for this very reason, because the face is right but the head shape or skin tone aren't right.
2) Coaches tend to be older, and therefore have craggier, flappier faces whicch would take a lot more polys to model. When you put a skinny 25-yr old's face on the head of another skinny 25 yr old it looks passable. When you take Lenny Wilkens' face and slap it on a generic head it looks nothing like him, because when you're in your 60s your face shape has melted beyond the generic
