Freestyle Control allows you to perform moves on command. Whereas you'd once tap the crossover button and a random move would be executed, with Freestyle you can perform the move you want to perform, to elude your defender. It also comes into play on defence.

To paraphrase what EA have been saying in the interviews and previews, it allows much greater control over the players.
