Questions about Sidewinder controls for PC and Sim/Arcade

I just bought the game and it seems as though Simulation is always greyed out when I go in to play a game and I can't find an area to change it when I'm at the main menus. Did they only do Simulation mode for the PC version? I wanted to compare Sim and Arcade. Please let me know how I can change it.

Also, some controller questions. Does anyone know how to call for a pick with the Microsoft Sidewinder. I also don't understand their explanation of how to call an offensive or defensive quick play with the Sidewinder.

In addition to that, I'm also stumped on what to press to do some of the low post moves like drop step, up and under, and jump hook. Please let me know if someone has a Sidewinder gamepad and understands what to push. Thanks.
