According to this guy https://www.youtube.com/watch?v=uqIXMjqA38w you can change mycareer rosters in nba 2k20 patch 1.05, but how can I go back to version 1.05?

In the description of that video, theres a google drive link to download the 1.05 exe file. Make sure you backup your current exe file thats in ur 2k20 directory, then copy and paste the 1.05 exe into your directory (replacing your current one)
