If you're talking about the 3D hair, like the hair that sticks out, then you need to go into the appearence.txt file (its the top file in the pngXXXX.iff file) and open it in notepad+. Then scroll to the bottom and look for the line "has_facial hair: true" or something similar and change the "true" to "false". This will keep the hair and turn off the facial hair.

This is kinda just a learn as you go thing. Try to edit the layer using a combination of brightness, hue, saturation, etc.
Photoshop has a "match color" feature that is hit or miss, but I don't use GIMP so that may not be an option.
Again, I am by no means a pro like some of the guys here, so they may have better advice.
