The random double-digit number is 10a + b where a is the first digit and b is the second digit (for example if we take 56 then a = 5 and b = 6). Then in the end we get (10a + b) - (a + b) which equals 9a. The answer is always a multiple of 9.
But it's the fact that the table changes every time that makes this trick work.
