Change jerseys, player height, etc with a hex editor (Xbox)

Hey guys, I've been using a hex editor, HxD in particular, to edit a roster file for the Xbox version of NBA 2k11. So far, I've been able to modify team names, player names, logos, and stadiums, but I'd like to mess around a bit with other things like jerseys and attributes such as age and height. However, I've been unable to find out how to do any of these things with just a hex editor. Unfortunately, modifying the Xbox version of the game means that I can't use any of the tools I used when I was fooling around with the PC version.

Does anyone out there know how to do things like change height, swap out cyberfaces, etc with JUST a hex editor?
