Where is the set a pick option?

Is this option available on 2003? Tried different button combinations and can't seem to get it to work.

Under offensive strategy you can select pick and roll.

You can set it up in quick plays. It works beautifully. Everything from Pick and Rolls to Isolations on the offensive end can be called with those quick plays.

It's part of the freestyle control, if you have a supported gamepad, you can just press a button on the D-pad(which direction I forgo).
