If you are talking about the fancy ones shown in the intro movie, I think you need to be a freestyle superstar passer to do those. To do it, press the layup button, then before the player shoots, hold down the freestyle superstar button and press a corresponding face button. Basically, its the same as doing a freestyle superstar pass but in mid-layup. Hope this helps.
