1.I think if its set all the way up you cant run out of bounds as easy but im not sure somone might be able to tell you for sure.
2.Not sure what v-snyc and all that is. But crowd animation will make the crowd move.
3.?
Extra. I think your talking about the 3d crowd settings.

1- what does boundary force field mean?

How far a player can go before out of bounds is called. At least that's what I think.

3- why does crowd shouting making noise their voices make my ears
mad? is it the same on your computer?

If a crowd shouts, then obviously it's going to be loud and you're going to hear it. If it gets to the point where it makes you uncomfortable, then just lower the crowd volume.

I'm guessing that is just to configure how good the crowds look, I believe that there is another option that allows you to adjust the crowd's volume.

1. What the other guys said is correct. It's how easy/hard it is for a player to step out of bounds.

2. Triple buffering is an effect used it games that draws the graphics three times instead of two (that is normal); using it will give you less flickering and lagging while playing the game. If you have a good computer, it's good; if you have a bad computer, it's not since it takes up more of the computers buffer memory...
V-sync is an effect that limits the frame rate of a game and makes it compile with the monitors' refresh frequency; using it could give you more fluent gameplay (depending a lot on your computer), and also removes 'page tearing' (where only half of the screen gets drawn in one frame). Same thing goes for this: if you have a good computer, it's good; if you have a bad computer, it's not.
Crowd Animation is, as joejam999 said, that the crowd will be moving (animated).

3. To adjust the volume of the crowd, just turn down the 'Arena Volume' slider in the Preferences.
