The X, Y, and Z are color values. X is red, Y is green, and Z is blue. If the numbers are all the same, the color will be desaturated from white at its brightest intensity, to black at its lowest intensity. If one of the values is more than the other, (x=1, y=.75, z=.75) than the shine will have a tint of color.
I suggest you edit the litcsz.ubr file to see your changes quicker in edit player. Then you can just copy the values into the lit5on5 file.
0 is the overall highlights of the players and objects.
1 is the overall shading of the players and objects.
2, I have no idea, I have never noticed anything different when changing it.
3 is the overall shine of the players and objects.
Colour is the main color value of the light.
Camera Space, I don't know. The X, Y, and Z values have to do with space or positioning here, not color.
LightBias is the space/direction that the light is applied. Again the X,Y, and Z values are not for color here.
LightScale is the scale of the light. When editing player shine I have noticed that increasing this value actually decreases the amount of shine that shows up on a player. Also, editing Camera Space can make this look different. Again, X, Y, and Z are not color values here.
AmbientColour is the overall base lighting. Increase it and you see alot less shading and shine, maybe even none of either. You can always use negative values in the Colour section to correct the shading, while still keeping some ambience. XYZ are color values here.
SkinDiffuse is an overall "Colour" value for each skin tone of player. If the x, Y, and Z values aren't equal, you might get a tint of color on jerseys and shoes and accessories. I'm not sure if this applies to Live 2005, though. SkinDiffuse_0 is the brightest tone, SkinDiffuse_4 is darkest tone.
Skinspecular is the shine on each skintone.
SkinspecularPower is the area on the skintone. Increase it and it will decrease the area of the shine. Decrease it, and the area of the shine will increase.
The other ones are pretty self explanatory, Uniforms, Accessories, coach, referee, and the ball.
