lol, yeah so true. CPU actually shoots fadeaways when open quite often, and scores them. It's an amazing AI this year. Actually that open shot is also the problem why guards dominate in the game so much, but sadly there's no real way to tweak the AI, only tweakable option is what is in aiact, and this mainly deals with animations and their logic.
But anyways, I suggest increasting on-ball user physical defence and slowing down the game. 55 is too fast even though fast breaks are too slow on 38 which I myself use (NBA Live 07 seems to be missing the fast-break player speed completely, and merely is balanced for best speeds during plays), the playrunning speed is perfect and quite accurate.
If you fail to defend even with slower speed and more on-ball physical defence, don't guard the PG or SG yourself and play with one of your post players in defence.
