How can i delete a player in NBA Live ? in the players.dbf file or otherwise ?

just put him in the free agents and save your roster..

Yes, that's what i do actually but I would like to delete finally players who no longer of interest (Jerome Moiso, Anthony Peeler, Marc Jackson, Derrick Coleman...).

Change their TEAM to 32. Never delete any rows in the database.
