DBF. Editing

I just downloaded DB Commander 2000 and i want to know where i could find all the files i can change for a dynasty ive already started. Also could someone please tell me what most the files mean because mostly i dont know what im changing. 
- Is there any way i can change the staff ( eg. ratings, specialty) for a dynasty?
- can someone give me a basic rundown on what everything means?
- what are these folders: workingdb, profiles, originaldb..etc
