In the NBA it is done to make room for roster space. Usually players getting paied little or expiring contracts. I find that there isn't really a reason to release a player in LIVE since you can't sign a player easily, especially if you are over the cap.
Agreed, in NBA Live it's usually best to release a player with a minimum contract (or close to it) and/or an expiring deal. However, if another team signs that player they take on their contract so it will come off your books. In most cases the CPU team will need cap space and the player in question will have to be decent and affordable so you won't always be able to rely on that happening.
I released Malik Allen (60 OVL, $1.67 mil contract) in my Bulls Dynasty to make room for another signing and the Bucks picked him up a couple of weeks later, which gave me some cap space I could use again.
