where you can shove a player whenever you want?

I don't think it's quite like that but I believe if you tap the steal button a couple times it fouls the opponent on the run or standing still.

I want to do more than just shove, say Shaq is coming in for a dunk, i want 3 of my guys to push the shit out of him, have him twist his ankles or something... or break an arm and go on the injury list for 10 months...

Not sure if you're joking or not, but there's no chance of that happening. At this point it's final testing and double-checking details such as ratings and bio data. New animations/game physics aren't going to be implemented now.
