On the PC, it's executed by pushing the dunk button (might be different on the XBox) while the ball is close to the ground and the player. Try to go into practice mode and see what works..

Yeah Andreas is right, it should be the steal button.. in this years live, you have to be more closer to the ball to dive than last year.
