You mean when what Kobe did in the seconds of the All-star game?

The "splitting defenders" move/animation happens automatically when you manage to weave between two opponents, if that's what you mean.

well after just messin around for about 10 minutes in practice mode with starbury i finally figured it out. i know what the "splitting defenders" animation is and thats not what i was talking about. u can do the behind the back dribble anytime you want, its jus sorta hard to pull off but u can do it with enough practice. lets say you're dribbling foward with your right hand, what u have to do is move the right joystick down and turn it to the opposite side (in this case, left) in the motion of an arc. so basically if you're dribbling the ball foward with ur right hand you go down to the 6 o'clock position and turn the joystick to the 9 o'clock position (if dribbling with ur left hand u go from 6 to 3). you hafta do it quickly though, if u do it too slow it'll do another animation where he hesitates and turns. if all that sounds confusing just mess around with the right joystick in practice mode or something. u'll eventually get it like i did :D
