Realistic play in franchise mode

I am new to the game...but a long time fan of the nba live series...
I thought nba live 01 PC version was not realistic...but ea has outdone themselves this time, what I realy don't like are high jumping (tall) PGs like baron davis...getting 5 blocks per game...it just an't right.
I am however experimenting with tweaks in Franchise mode...then untweak in off season etc.
Just hope that someone can help me with some questions...
1) I don't really wanna fix player growth...I like it random. For example if I tweak FG*0.5 at beg season then I go FG/0.5 before the offseason begins, this effect should offset exactly such that player growth would be normal...old players decline exactly the same young players grow the same right.
2) Can ratings ever be over 100 or lower than 50? I think I will tone down block, jump etc. But if a player had initially 50 jump...then it would become 45 (will thhis crash?). Likewise, I will tone up D.awareness by 20% or so coz its too easy to pump fake and send guys flying...guys with 60DA will now be 80 so that is good...but guys with 90 will now be 110...(this is over the limit) right?

when we start men which roster will be using??

I think i'd just use the roster that came with the game...and tweak that...so original roster.
I wanna avoid downloading the online rosters because i am enw and don't really know what kinda changes they made...salaries...ratings etc.
The original roster while won't be the best...guranteed to be at least decent.
