Primacy determines how often the CPU uses a player on offense. Go-to guys have higher primacy and will be the first option on offense when controlled by the CPU.
Hardiness determines the likelihood of injury when simulating games. It doesn't affect in-game injuries.
Endurance is a player's Fatigue rating, and determines how quickly they tire and recover their strength.
