Blender face shape editing

I seen the tutorial from JaoSming on how to do the face shapes in blender and I still can't learn the keys to edit and change the face shapes..
Do you know anybody that could really help me out?

how do you grab like the ear lobe and it automatically changes the other ear lobe the exact same? I forget the keys

When i'm on blender and I have my cyberface face shape up and I go to the right and go to uv image editor to choose the dds file when I load it the dds face is not congruent with the cyberface face shape the face be twisted...does anybody know how to fix that or whats going on?
