3D Editing Help

Im using blender but I just dont see how its that easy to make a guy with your perfect head shape that you want. Am I missing something easier??? Right now I just have to drag parts of his head like the video showed me ?

But from that way it would seem impossible to do. Would you or someone mind next time your making a cyber face of a video tutorial on everything your doing? Unless I missed one in the tuturials of a step by step or something.
